Tomato To The RescueTomatoes are key to our cooking. The best bit about this wonder vegetable is that tomatoes can give you great skin as a food and as a beauty mask. It is not only known to have cancer-fighting lycopene, tomatoes also improve your skin and hair from the inside. According to celebrity stylist Jojo, drinking a glass of tomato juice first thing in the morning cleanses your system and provides it with all-important antioxidants. Thus it is a great favourite with chefs looking to create cooling summer salads.

Try this savoury tomato salad: This serves four.

2 medium red tomatoes
2 medium yellow or orange tomatoes
¼ cup fresh basil, chopped
½ medium red onion, thinly sliced
½ cup frozen corn kernels, thawed, rinsed, drained
¼ cup oil cured sundried tomatoes, chopped
¼ teaspoon fresh ground black pepper
4 tablespoons balsamic vinegar
4 teaspoons extra virgin olive oil (optional, but recommended)
¼ cup shaved parmesan cheese

Slice the tomatoes and arrange on plates, alternating colors. Layer the remaining ingredients starting with the basil, then onion, corn, sundried tomatoes, pepper, vinegar, and olive oil. Top with cheese, paneer or tofu. Refrigerate. Take out about 10 minutes before serving to have a cool crispy texture.
