But before we begin, you must know the importance of compound butters. The specialty of compound butters is that it can be prepared one week before and then stored in the fridge and they are ready to use. The butter tastes heavenly with grilled vegetables. For the Grilled Sweet Corn Served with Choice of Compound Butters serving 4 to 6 people, you will need sweet organic white corn 4 to 6 in number. The ingredients that you will need for making the Spicy Olive Compound Butter include1 tablespoon of toasted pine nuts, 1 small garlic clove, 2 tablespoons Mediterranean olives chopped which you can also choose to soak in a spicy red pepper marinade, 1 teaspoon marjoram leaves, 1 teaspoon thyme leaves, 1 stick or 8 tablespoons of unsalted butter which has to be softened and cut into pieces, and salt to taste.
For the Blood Orange Compound Butter you will require one blood orange zest, 1 cup juice of blood orange, 2 large shallots which should be minced, ½ cup white wine, 1 stick and salt. Then you will need to put the butter over a parchment paper and roll it over into a log and twist the ends and refrigerate it for a week. For the Blood Orange Butter you will have to blend shallots, blood orange juice, white wine and butter zest from orange and then after adding salt to it you will need to follow the same process for the compound butter. For the Grilling Corn you will have to remove the corn from silk and husk and then with olive oil you will need to brush the corn and season it with salt. Then you will need to grill the corns for 10-15 minutes and serve with your choice of compound butter.
