One of the healthiest and lip smacking organic food recipes is that of Organic Broccolini & Spinach Soup. For those who are fond of soups, they will find Organic Broccolini & Spinach Soup a real treat. Soups are very appetizing and nutritious and when it comes to the Organic Broccolini & Spinach Soup recipe there is much more than just nutrition and health.

Easy to make in minutes, the Organic Broccolini & Spinach Soup is an unique soup and a cheerful relief from the regular soups that you were bored off. The unique recipe of the Organic Broccolini & Spinach Soup is not only easy to make but what makes it a hit with the young as well as the old is its great taste. To make the soup you will need Broccolini which is a hybrid vegetable. This hybrid vegetable is a combination of broccoli and another vegetable called the Chinese kale. The Broccolini is a vegetable which is very tender and has edible florets and stems. The vegetable has a mild sweet taste. But in this soup if you are using broccoli instead of Broccolini, you will need to peel off the stems which is not required for Broccolini which is very tender.

While shopping for the organic foods you must be careful where you are shopping from and what you are buying. It is always advisable that you buy certified organic ingredients. Here is the recipe for the Organic Broccolini & Spinach Soup for a serving of 4 to 6. For making this soup you will require 1 ½ pounds organic Broccolini, 2 tablespoons of extra-virgin olive oil, 1 cup of onion all diced, 1 cup of leek all chopped, 1 ½ tablespoons of garlic all minced, freshly ground pepper and salt, 1 teaspoon of chopped fresh basil, 1 teaspoon chopped fresh marjoram, 1 teaspoon chopped fresh Italian parsley, 5 cups organic vegetable stock (or chicken stock), 2 cups washed and trimmed organic spinach, 2 teaspoons freshly grated zest of lemon, 2 tablespoons Meyer Lemon juice and 1 cup of organic vanilla soy milk.

The method of cooking the soup is simple. You will need to chop off the florets from Broccolini into ½ - inch pieces. Then you will need to cook the onion in olive oil, and after adding salt and pepper you will need to cook it for one minute. and leek to pan and season with salt and pepper. Add garlic and cook for about 1 minute. After cooking all the vegetables for 10 minutes you will need to stir them with marjoram, basil, and Italian parsley. After this you can add on the vegetable stock, broccolini stems and salt and pepper. After simmering for 2-3 minutes you can add the florets, spinach and the lemon zest one by one and then puree the soup. The again you will need to blend the soup in another pan with soy milk and lemon juice and after seasoning it you can freeze it.
