Do you often sulk or try for some innovative excuse at the sight of egg yolk, then ensure your insurance facilities for future because you might be just heading towards a grim future. Sounds casual or perhaps funny? It wont actually, after you discover the real benefits and the nutritional value of egg yolk. A part of an egg that acts as the source of food for the developing embryo within is called the egg yolk. The egg yolks are better and major food source of vitamins and minerals. These contain almost the whole of egg`s fat and cholesterol, and almost half of the protein as well. Facts about egg yolk:
The egg yolk accounts for about 33% of the egg`s liquid weight, it also contains approximately 60 calories which is four times the value of the calorie content of the egg white. The yellow color of the egg yolk can be attributed to the presence of xanthophylls. Almost all the fat soluble vitamins like A,D,E and K are found in the egg yolk. Egg yolk is also the source of lecithin, an emulsifier. A large egg yolk contains over more than two-thirds of daily limit of 300mg cholesterol that is usually recommended. The fatty acids composition in egg yolk are:

Unsaturated fatty acids: Oleic acid 47 % , Linoleic acid 16 %, Palmitoleic acid 5 %, Linolenic acid 2 % Saturated fatty acids: Palmitic acid 23 % ,Stearic acid 4 % ,Myristic acid 1 % Uses of egg yolk:
Egg yolk is used in different ways , it also has some other properties, take a look:

  • Egg yolks are used for cooking purpose , sometimes even separated from the egg white and used.
  • Sometimes egg yolks are used as an active component for particular painting types.
  • Egg yolks are also used in the production of egg-yolk agar plate medium (used in Clostridium perfringens tests).
  • Egg yolks contains antibody called Immunoglobulin yolk that provides passive immunity.
  • Egg yolks are also used to make liqueurs such as Advocaat.
