Whether it’s for your guy or gal or just to keep your three-year-old pest of a sister or brother out of your hair, these recipes are great fun.
Spider cookie recipe
Ingredients:
2 chocolate wafer cookies
chocolate frosting
mini chocolate chips or Gems
black lace liquorice
Method:
1. Spread the chocolate frosting on the flat side of each cookie. 2. Cut a piece of liquorice into eight pieces about two to three inches long. 3. Stick the liquorice on the frosting, on one of the cookies so they look like the spider's legs sticking out (four sticking out on each side). 4. Then put the other cookie, frosting side down on top of it to hold the `spider legs’ in place. 5. Using the frosting as your `glue’, add two eyes using the chocolate chips or gems and enjoy!
Pinwheel cookies
Ingredients:
1 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter softened
1/2 cup white sugar
1 egg yolk
3 tablespoons milk
1/2 teaspoon vanilla
6 ounce per kg semisweet chocolate chips
Method:
1. Sift flour, baking powder, and salt together. In a large bowl blend the butter sugar, beat in the egg yolk, milk and vanilla, and add the flour mixture mix. 2. Divide dough into two parts and put one part into the fridge to cool. 3. Melt chocolate in the microwave and add to second half of dough. 4. Both parts need to be chilled for about two hours. 5. Roll out the black and white sections separately until 1/8 to 1/4 inch thick, on a piece of wax paper. 6. Carefully place white on top of black by turning the white upside down. 7. Take off top layer of wax paper. 8. Starting at one end, roll both parts together to form a log-type shape. 9. Cut into 1/8 thickness and bake at 375 for 7 to 10 minutes.
Variations: use food colouring for either of the halves. You can omit chocolate half and use white chocolate, etc.
Vegan chocolate chip cookies
Ingredients:
1 cup dairy-free margarine
3/4 cup sugar
1/4 cup brown sugar
3/4 to 1 teaspoon salt
2 home-made fake eggs*
1 Tablespoon vanilla
2 1/2 cups flour (actually, you can use up to 4 cups of flour - the more flour you use, the denser and chewier the cookie; the amount listed here is for a texture that most people like)
1cup non-dairy semi-sweet chocolate chips
Method:
1. Preheat oven to 350°F. Cream together margarine, sugars, and salt in a large bowl. 2. Beat eggs in a small bowl. Then add to margarine-sugar mixture. 3. Add vanilla and combine. 4. Add flour slowly and little by little, stirring constantly to combine. Continue until all flour is well combined (the more flour you add the harder it gets to combine). 5. Mix in chocolate chips. Form dough into one-inch balls and place on an ungreased baking sheet. 6. Then flatten them with a fork and put them in the oven. They'll be ready in about 10 to 12 minutes, or when golden brown. Makes about three dozen cookies.* Fake egg: *1 tsp baking powder *1/2 tsp baking soda *2 tbsp flour *3 tbsp water. Combine ingredients in a small bowl and mix together with a fork or wire whisk until foamy.
Butter cut-out cookies
Ingredients:
1 1/2 cups butter
1 1/2 cups powdered sugar
2 egg yolks
4 cups flour
Method:
1. Cream shortening and sugar together until light and fluffy. 2. Add egg yolks and continue to beat. 3. Add sifted flour and stir until well blended. 4. Roll out on floured surface until about 1/8 inch thick. 5. Cut out with your favourite shapes and decorate with candies, or coloured sugars. 6. Bake at 375 until golden (about 10 mins). You will get about three to four dozens depending on the shapes used.
Crunchy chocolate chip cookies
Ingredients:
1/2 cup shortening
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
2 tbsp milk
1 egg
1 tsp vanilla
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
2 cups crisp rice cereal
1cup semi-sweet chocolate chips
Method:
1. Heat oven to 350°F. 2. Cream shortening, sugar, brown sugar, and milk in a large bowl at medium speed of electric mixer until well blended. 3. Beat in egg and vanilla. 4. Add flour, baking soda, and salt. 5. Mix until blended. 6. Stir in cereal and cereal. 7. Drop large tsps of it on greased baking sheet. 7. Bake for 9 minutes. 8. Cool on a rack.
