Breakfast bites

Some recipes to help you get that oh-so perfect breakfast on the table

Why does your omelette look like an amoeba crying for help? Why is it that the rest of the world seems to be eating the perfect breakfast while you are struggling with even your morning juice? Well, with the right recipes, well help you turn breakfast into a pleasure it once was.

The perfect omelette

Ingredients:

2 large eggs

2 tablespoons of water

butter to coat pan

Method:

1. Beat eggs and water together in a small bowl. 2. Place butter in the pan to coat it with heat on high. 3. Add egg mixture. As the egg starts to cook, gently bring the sides toward the middle, letting the liquid fill in the spaces. 4. At the same time, add your filling - ham, onions, peppers, cheese, tomatoes - on one side and fold over. 5. Cook for 60 seconds and flip omelette. 6. Cook for another 30 seconds and slide omelette onto plate.

Note: If you are making more than one omelette, beat all your eggs and water together and use a full cooking ladle for each omelette. A full ladle is equal to two eggs and two tablespoons of water.

Scottish pancakes

Ingredients:

1 cup all-purpose flour

2 tbsp sugar

1 tsp baking powder

1/4 tsp baking soda

1/2 tsp lemon juice or vinegar

3/4 -1 cup milk

1 egg, lightly beaten

2 tbsp melted butter

extra melted butter

Method:

1. Sift flour, sugar, baking powder, and soda into a medium-size mixing bowl. 2. Add juice or vinegar to the milk to sour it; allow to stand for five minutes. 3. Make a well in the centre of the dry ingredients and add the egg, 3/4 cup milk, and the butter. Mix to form a smooth batter. If the batter is too thick to pour from the spoon, add remaining milk. 4. Brush base of frying pan lightly with melted butter. 5. Drop 1-2 tablespoons of mixture onto base of pan, about 3/4 inch apart. 6. Cook over medium heat for one minute, or until underside is golden. 7. Turn pancakes over and cook the other side. 8. Remove from pan and repeat with remaining mixture.

Fruit pick-me-ups

Ingredients: 

1 (8-ounce) carton yoghurt, any flavour

1 cup milk

1 large sliced banana

Fruit, your choice about 1 cup cut-up (can be frozen)

1/2 teaspoon vanilla extract

8 to 10 ice-cubes

Method:

1. Place all ingredients into container of electric blender. 2. Blend on high until smooth, about 30 seconds. 3. Serve immediately.
