Pears in Red Wine

Ingredients















Red wine1 bottleSugar2 cupsOrange juice1 cupWater2 cupsOrange peel (grated)2 tspsCardamom (ground)1 tspCinnamon stick2 inches5 ripe pears with stemsVanilla ice cream1 pintOrange peelslittle strips

Methodology

  • Put aside the last three ingredients for now.
  • Mix the first 7 ingredients together
  • Put them into a vessel.
  • Stir occasionally.
  • Put in the pears into the mixture
  • Let it simmer for a while
  • When the pears get soft, pierce them with a knife
  • Simmer for half an hour.
  • Remove pears from vessel and place them on a plate.
  • Boil the liquid till it thickens
  • Chill and preserve the liquid after it cools down.

To serve

    Arrange one pear and one large scoop of vanilla ice cream on each plate.
  • Sprinkle a few drops of the preserved liquid very each plate.
  • Garnish with orange peels
  • Serve immediately
