Place about 1 ½ cups of cashewnuts in the mixer jar, fitted with dry grinding blade. Run the mixer till the cashewnuts are powdered but not ground to sticky paste.( use the incher to avoid over grinding) Sift through a strainer ( not too fine mesh). Measure the fine cashew powder ( use the coarse residue in other dish like kurma) Now proceed as belowCashewnut powder1 cupIcing sugar3/4 - cup as per tasteSaffrona big pinchCardamom powdera pinchAlmonds2-3Pista2-3Condensed milkto bind

Soak almonds and piatas in hot water for ½ hour. Peel and cut into thin slivers. Soak saffron in 1 tsp of hot milk and crush well. Combine cashewnut powder with icing sugar. Add saffron and cardamom.Mix well. Add condensed milk little at a time till the mixture is like chapathi dough. Roll out this dough to ¼ cm thick sheet using some extra icing sugar for dusting. Sprinkle the almonds and pista uniformly over it and roll once lightly to make the nuts stick. Cut into diamond shapes. Allow to dry out for bout ½ hour before storing into a container. If keeping for more than two days, store in the frig.

Note:  If making a larger quantity, powder the cashewnuts in batches. If a large quantity of nuts are powdered in one batch, the nuts along the sides of the jar at the base becomes sticky and oily. 
For a more economical verssion, use 1 cup cahewnut powder, 1 cup milk powder and 2 cups icing sugar.

Extra almonds to garnish
Chop the apricots, dates and figs. Mix with raisins. Place ½ this mixture in the mixer jar and process, using the incher ( pulse) till it is reduced to a rough mass. Do not over grind or make a paste.Repeat with the other half. Mix in chopped almonds.Add honey if using. Divide into small balls and press lightly to make discs like pedas. Press an almond on each disc. Arrange in small attractive boxes and cover with a cling film. 
Note : Almond oil is rich in omega 3 wich reduces the bad cholesterol.
