Clean the cauliflower and grate them. In a heavy-bottomed pan, add milk and the grated cauliflower and boil till the milk becomes thick. Later add sugar, mix well and remove from heat. Fry cashew nuts and raisins in ghee and top the kheer with them. Add powdered cardamom and serve chilled.
YELLOW PUMPKIN AND CARROT KHEER
Yellow pumpkin100 gmsCarrot (medium sized) 2 nosSugar1/2 cupSkimmed Milk˝ ltCardamom 1 tbspCashew nuts for garnishingGhee1 tbsp
Peel the pumpkin. Remove the seeds and cut into pieces. Peel the carrots and cut into large pieces. Pressure-cook it without water. Mash well. Transfer the mixture to a thick-bottomed vessel. Keep on a low fire. Add the sugar and mix well. Stir for a few minutes. Boil the milk. Add it to the mixture. Keep on fire for just two minutes and transfer it to a serving bowl. Garnish it with cashew nuts fried in ghee and cardamom powder and serve chilled.
