GAZPACHO – SPANISH [ for 4]

  • Tomatoes 3Cold Soups-Gazpacho
  • Cucumbers 2
  • Green pepper 1
  • Parsley a few
  • Scallion a bunch

Fresh dill or dried dill a little
Blend & puree all the above together, until fairly smooth

  • Thick tomato juice 3cups
  • Cucumber, carrot,
  • Green pepper 1 – finely cut
  • Tomatoes 2 –finely cut
  • Celary a little, finely cut.
  • Lemon juice 1 tbsp
  • Chili powder a pinch

Pepper powder & salt as required
Stir in the tomato juice & lemon juice
Add all other ingredients stir & refrigerate

GAZPACHO- INDIAN VERSION [for 4]

  • Tomatoes 6
  • Cucumber 1
  • Green pepper 1Cold Soups-Gazpacho
  • Ginger 1piece
  • Mint leaves a few
  • Cinnamon, clove 1each
  • Grind together & strain.
  • Lemon juice 1tbsp
  • Sugar 1tsp
  • Worcestershire sauce 1tbsp
  • Chilli powder a pinch

Add all the above to the strained soup Blend again & refrigerate

Serve with salt, pepper &crushed coriander leaves
