CUCUMBER YOGURT SOUP- ITALIAN [for 4]

  • Cucumbers 2 largeCold Soup-cucumber Yogurt Soup
  • Yogurt 3cups blended into thick liquid
  • Parsley, dill,& mint leaves 2tbsp finely chopped
  • Sugar 1tsp
  • Chilli powder a pinch

Pepper & salt as required

Peel & grate cucumbers. Place it in a large colander. Let stand for 30min.
Mix the collected juice, cucumber gratings, & all other ingredients
Refrigerate for a while& serve

CUCUMBER YOGURT SOUP- INDIAN VERSION [for 4]

  • Ginger, 1small piece
  • Green chilli 1
  • Coriander leaves a fewCold Soup-cucumber Yogurt Soup

Grind the above 3 together & strain.

  • Cucumbers 2 large
  • Thick buttermilk 4cups
  • Amchur /chat masala powder a pinch

Salt & asoefotida as required Grind the cucumber without any lump
Stir into the buttermilk
Add the blended ginger juice & salt, asoefotida
Refrigerate &serve with a little masala powder on top
