This is a great tasting Mulligatawny soup with a difference. Will keep them coming back for more!
Ingredients :
- Masoor dal ----- 1 cup
- Chicken stock (Skimmed of fat) ---- 5 cups
- Chicken breast (without skin) ---- 250 grams
- Oil ----- 1 tablespoon
- Cumin ----- Â3/4 teaspoon, crushed
- Onion ----- ½ cup, minced
- Garlic ---- 2 teaspoons, minced
- Black pepper powder --- ½ teaspoon
- Salt and lime juice --- To taste
Method :
Wash the dal, add 3 cups of stock, chicken breast and pressure cook for 5-7 minutes. Meanwhile, heat the oil in a small non-stick pan and add cumin. After one minute, add the garlic and fry till light brown. Add onion and fry till they are slightly browned. Add pepper and remove from fire. When the dal is cooked, lift out the chicken piece. Cool and shred. Blend the dal in a mixer. Combine with remaining stock, chicken meat and fried seasoning. Add salt to taste. Simmer for 5 more minutes and serve hot.This soup is generally served with a tablespoon of cooked rice in each bowl (optional).
