A firm grip and a sharp wrist-flick. That is the key to mastering this most impressive culinary trick.
1. Using your thumb and forefinger, grasp the egg toward one end. Position your pinky and ring finger toward the other end, with your middle finger in the centre.2. Give the egg an authoritative crack on the edge of a mixing bowl; timidity will only yield a bowlful of shell fragments.3. Spread your thumb and first two fingers apart from your ring finger and pinky. The shell will split open, and the contents drop neatly into the bowl.
