A wholesome baked dish full of goodness - every bite is simply delicious and the best thing about it, is that it is totally low-cal!

Ingredients
For baking
Grated cooking cheese - 2 tablespoons
finely chopped spinach - 10 cups
chopped onion - 1
plain flour (maida), optional - 2 teaspoons
Green chillies - 2 chopped
Skimmed milk powder - 2 teaspoons
A pinch of soda-bi-carb
oil - 2 teaspoons
Salt and pepper to taste

For the vegetables
Chopped mixed boiled vegetables - 2 cups
white sauce - 2 cups
Salt and pepper to taste

For the spinach
Add the soda bi-carb and 2 teaspoons of water to the spinach and cook until soft.
Drain out the liquid and blend the solids in a liquidiser.
Heat the oil and fry the onion, flour and green chillies.
Add 3 teaspoons of water to the skimmed milk powder and mix well. Add to the onion and green chilli mixture.
Add the spinach mixture, salt and pepper and cook for about a minute.

For the vegetables
To the white sauce, add the vegetables (French beans, carrots, cauliflower, green peas), salt and pepper. Mix well.Spread the spinach mixture on a greased baking dish and cover with the vegetable mixture.Sprinkle the grated cooking cheese on top and bake in a hot oven at 225º C for about 20 minutes.

Serve hot.
