Ingredients:













Ridge Gourd2 nosRed chillies4-5 nosUrad dal1 tbspSaltto tasteAsafoetidaa pinchTamarinda pinchMustard1 tspCooking oil1 tsp

Method:

  • Skin the ridge gourd and chop into small pieces.
  • Heat oil in a tawa and add mustard.
  • When the mustard splutters, add red chillies, urad dal, ridge gourd.
  • Sauté till the urad dal turns golden brown. (The ridge gourd is sautéed to remove excess moisture from the vegetable).
  • Remove from fire and allow it to cool.
  • Then pour mixture into a mixie jar; add, salt, asafoetida and tamarind.
  • Blend to a smooth paste.
  • This chutney can be served with chapattis, rice, bread, idlis as well as dosas.
