Ingredients:
Ridge Gourd2 nosRed chillies4-5 nosUrad dal1 tbspSaltto tasteAsafoetidaa pinchTamarinda pinchMustard1 tspCooking oil1 tsp
Method:
- Skin the ridge gourd and chop into small pieces.
- Heat oil in a tawa and add mustard.
- When the mustard splutters, add red chillies, urad dal, ridge gourd.
- Sauté till the urad dal turns golden brown. (The ridge gourd is sautéed to remove excess moisture from the vegetable).
- Remove from fire and allow it to cool.
- Then pour mixture into a mixie jar; add, salt, asafoetida and tamarind.
- Blend to a smooth paste.
- This chutney can be served with chapattis, rice, bread, idlis as well as dosas.
