Pumpkin seed sauce

Ingredients

 







Pumpkin seedsshelled - 1 cupOnion chopped - 1 largeBread1 large slice - cut into small piecesGarlic 2 clovesVegetable oil3 teaspoonsCapsicum chopped - 1 smallVegetable broth2 glassesWhipping cream ½ cupVegetable oil 4 teaspoonsSalt to taste

Methodology:

  • Pour the oil into the frying pan.
  • Add pumpkin seeds, chopped onions, crushed garlic and all the pieces of bread.
  • Stir till bread gets golden brown.
  • Add chopped capsicum.
  • Cook for a couple of minutes
  • Pour into blender.
  • Add some of the vegetable broth.
  • Whip till smooth in texture.
  • Pour into a bowl.
  • Add remaining broth, shipping cream and salt.
  • Stir well.

This unique sauce goes well with quite a few Mexican dishes.
