Crunchy corn salad

Ingredients

  1. Two cups of fresh corn - Boiled till tender and then drained
  2. 2 Tomatoes, finely chopped
  3. 1 cup of finely cut spring onions
  4. 1 green bell pepper, de-seeded and chopped
  5. Four to five spinach leaves, washed and rinsed
  6. 1 tablespoon of vinegar
  7. 1 teaspoon of pepper
  8. 1 tablespoon of olive or salad oil
  9. 1 clove garlic, minced
  10. Salt to taste
  11. Finely cut coriander for garnishing

Preparation

In a large bowl, mix vinegar, oil, pepper and garlic. Add corn, spring onions, tomatoes, and bell pepper. Add salt to taste. Toss well. Keep chilled for about three hours. Just before serving, arrange the spinach leaves in a large glass bowl. Pour corn salad into it and serve garnished with either parsley or coriander leaves.
