Here is a well-balanced Italian (with some Indian flavour of course) dish that uses paneer for protein and wheat flour and vegetables for minerals, vitamins and fibre. Try it!

Ingredients
For the dough
1 cup wheat flour
2 teaspoons oil
Salt to taste

For the sauce
1 teacup tomato puree

For the stuffing
2 cups finely chopped mixed boiled vegetables (You can use French beans, carrots, cauliflower and green peas)
50 gms paneer
1 chopped onion
1 teaspoon chilli powder
2 teaspoons oil
Salt to taste

For the topping
2 tablespoons grated paneer

The Dough
Mix the flour, oil and salt. Add water and prepare a soft dough.
Keep this aside for 1 hour.

The Stuffing
Heat the oil and fry the onions. Add the remaining ingredients and cook for 1 minute.

· Roll out the dough into small thin circles.
· Boil the water in a vessel and add 1 tablespoon of oil.
· Drop one circle of dough at a time into the boiling water, cook for 1/2 minute and remove.
· Fill each circle with 1 tablespoon of the stuffing and roll up like a pancake.
· Arrange the canneloni on a greased baking dish and pour hot tomato gravy on top. (the puree can be spiced up with some herbs and spices if you want)
· Sprinkle the paneer on top.
· Bake in a hot oven at 200 º C for 10 minutes.
