Avocado salsa

Mexican food is now in great demand the world over. And no wonder too. It's refreshing, it's tasty and it's different.

Avocado Salsa isn't too difficult to make. You can easily whip it up at home. Try this recipe. It's tangy and exotic. Avocado salsa can be served with appetisers like chips and other dry snacks.

Ingredients needed:

¼ kg or less corn kernel1 can of ripe olivessliced1 capsicum(preferably red)1 onionchopped6 cloves of garliccrushed ½ cupoil¼lime juice4 tablespoonsvinegar 2 teaspoons oregano1 teaspoon freshly ground pepperSalt to taste5 avocadosPeeled, cut and seedless

Methodology

  • Put together corn, olives, capsicum and onion in a bowl. Mix well.

  • In another vessel put it the garlic, olive oil, lemon juice, vinegar, oregano, salt and pepper. Mix well.

  • Add the contents of the first bowl. Toss well.

  • Cover the dish and chill in refrigerator for a few hours.

  • Remove from refrigerator just before serving.

  • Add avocado pieces and mix well.

  • Serve immediately.
