TENDER RED PUMPKIN GRAVY

Cut the pumpkin with the skin and cook it along with turmeric powder and salt. Grind coconut, chillies and cumin seeds to a fine paste and mix it with milk and rice flour. Add these to the vegetable. Mix well and remove from the fire. Season with fried urad dal, asafoetida and curry leaves.
Variation: Tender snake gourd can be used instead of pumpkin.
SPINACH WITH SPICY GARLIC SAUCE

Remove the spinach leaves. Wash and steam cook the spinach. Add garlic paste to hot oil and fry. Add the sauces, red chillies and vinegar. Mix corn flour in a cup of water and add this along with salt and pepper powder. Boil till it becomes thick. Add the steamed spinach, mix well and serve hot with rice.
