Bet you never thought of cooking chicken this way. Try it out - its delicious!

Ingredients:
2 Cups Water
1 1/2 Cups Uncooked Couscous
1/2 Cup Orange Juice concentrate
1/3 Cup Lemon Juice
2 Tablespoons Water
2 Tablespoons Olive Oil
2 Teaspoons Ground Cumin
1/4 Teaspoon Black Pepper
3 Cups cooked Chicken, cubed
2 Cups peeled and chopped Cucumber
1 Cup Red Pepper, chopped
1/4 Cup onions, sliced
1/2 Cup Fresh Coriander

Bring water to a boil in a medium pan. Gradually stir in Couscous. Remove from heat, cover and set aside for 5 minutes. Fluff with fork. Combine with orange juice and add the lemon juice, water, olive oil, cumin and black pepper. Stir well. Add to Couscous mixture. Add chicken and the remaining ingredients. Toss Well. Serve.
