4 cupsPenne pasta, cooked1/2 onion, chopped1/2green pepper, chopped1/2red pepper, chopped2 tsp curry powder1 cupskim milk2 tsp cornstarch1/2 cup 1% cottage cheese1/4 cupcilantro
Place pasta in a large bowl. Place onion, green pepper and red pepper in a small microwave proof bowl, place on high for 1-3 minutes. Mix the pasta with the vegetables, stir well. Whisk the curry powder in the skim milk in a small bowl. Place in microwave on medium heat for 1 minute or until warmed. Mix well again. Place cornstarch in a water until dissolved. Add cornstarch to milk mixture. Place pasta mixture in a casserole pan. Pour milk mixture over pasta. Microwave for 5 minutes or until bubbling. Sprinkle cottage cheese on top. Sprinkle Cilantro too!
