Ingredients:

Lemon rind, chopped1Egg whites3Sugar2/3 cupCornstarch1/4 cupVanilla1/4 tspCottage cheese2 2/3 cupGraham crackers, crumbled8 low-fat 2"x2"

Method:

Preheat oven to 325 degrees and coat an 8" pan with cooking spray. Place lemon rind, egg whites, sugar, cornstarch, vanilla and cottage cheese in a blender and mix until smooth.

Pour into baking pan and pop into oven for 60 minutes or until cheesecake is set and cake tester comes out clean. Refrigerate cake in pan for at least four hours. Then spread graham cracker crumbs evenly over cake surface and gently pat down.
