Honey can be more than a sweetener for your tea or toast. In this recipe, we can use the above or otherwise classic lemon bars.
Butter or margarine, softened1/2 cupPowdered sugar1/4 cupFlour, divided1 cup + 1 tspHoney3/4 cupLemon juice1/2 cupEggs3Grated lemon peel1 tspBaking powder½ tsp
Preheat the oven to 350 degrees F. In a medium bowl, cream butter and powdered sugar until light and fluffy. Add one cup of flour and mix until combined. Press mixture evenly into the bottom of a 9-inch square pan. Bake for 20 minutes or until lightly browned.
Meanwhile, in a medium bowl, whisk the remaining 1 tbsp flour with remaining ingredients until thoroughly blended. Pour over a baked crust; bake 20 minutes more, until filling is set. Cool in pan and cut into squares to serve.
