French beans½ kgHard boiled eggs3 nosChopped bacon4 slicesCarrots¼ kgSpring onions, sliced1 cupPepperTo taste SaltTo tasteFor the Dressing
Vinegar or lemon juice¼ cupMustard powder1 tspPepper¼ tspCastor sugar2 dspsSalad oil3/4 cupSalt¼ tsp
Blend all this in a blender or shake in a bottle.
String the french beans and cut them into halves lengthwise and slice the carrots into long strips.
Parboil both the vegetables and drain.
Add the sliced onions to the vegetables and pour dressing over and toss well.
Chill and just before serving add chopped eggs and crispy bacon.
