Here is a recipe that is healthy and cooked fat free.

Rice and Peas

250 gms Rice
100 gms Kidney beans
1 sprig thyme (Ajwain leaves)
A bunch of spring onions
2 chillies
3/4th cup Coconut milk
Salt to taste
A couple of garlic flakes.

Method of preparation

Cook peas until almost done and then add the rice, coconut- milk, a sprig of thyme and the spring onions split into two. You need not chop them as they are only for flavour and can be taken out later. Add the chillies whole or split them in halves for additional flavour.Cook rice until done and serve hot with baked chicken.

Baked chicken

½ kg chicken
100 gms low fat curds
Red chilli powder
Coriander powder
Ginger garlic paste
Food colour(Optional)
Salt to taste

Method of preparation

Clean the chicken and remove all traces of visible fat. Now marinate the chicken in curd combined with ginger garlic paste, red chilli powder and salt. Allow the chicken to marinate in this mixture for at least an hour. (The longer you leave the chicken in the marinate, the better it will taste. About three hours is ideal.)

Bake the chicken for about 25 mins at 200 degrees. Make sure to bake on a drip tray so that excess fat can drip off the chicken. Eat hot with the rice and peas.
