Chicken Vindaloo is a traditional Goan dish. The Goans like to have it decked it with hot, sweet and sour tastes generously. However, when you will be preparing it, tone down the tastes according to your individual taste preference.
Ingredients
1 kg chicken
Vindalu Masala
3 tsp jira (cumin)
12 dry kashmiri chillies
1/2 an inch turmeric
2 pods cardamoms
10 garlic cloves
2 tbsp vinegar
Make a paste of all the spices and mix them with vinegar
Seasoning
3 tsp ghee
Few coriander leaves
1/2 onion finely sliced
Salt to taste
Preparation
Wash the chicken well and cut into even pieces. Mix the ground paste of spices with vinegar. Then start frying the sliced onions till they turn golden brown. Put coriander leaves, stir well and then put masala in it and fry for some time. Keep on stirring the mixture. Then add the meat and salt in it. Then cover the dish and leave the meat to be cooked in its own gravy. Stir at frequent intervals, as otherwise it can get burnt. Boil the potatoes and peel them off and cut into four pieces. Put them in the meat and cook at a simmer flame for about 10 minutes.
