Ingredients:

Lasagna noodles
2 tsp olive oil
2 chopped broccoli
2 sliced carrots
1 chopped onion
2 chopped green peppers
2 sliced zucchini
3 minced cloves garlic
1/2 cup all-purpose flour
3 cups milk
3/4 cup Parmesan cheese
Ricotta cheese
Mozzarella cheese
Curd Cottage Cheese
Chopped Spinach
1/2 tsp salt
1/2 tsp pepper

Preparation:

Preheat the oven to 375 degrees.

  • Pour salted water in a vessel and bring it to boil.

  • Add lasagna noodles and cook for 10 to 12 minutes.

  • Heal oil in a pan. When oil is hot add broccoli, carrots, onions, bell peppers, zucchini and garlic.

  • Cook the ingredients for 7 minutes and set it aside.

  • Place flour in a saucepan and whisk in milk until well blended.

  • Bring the mixture to a boil over medium heat. Cook for 5 minutes and stir constantly. Stir in 1/2 cup Parmesan cheese, salt and pepper. Cook for 2 to 3 minutes and stir constantly.

  • Remove the mixture from heat; stir in spinach.

  • Mix Curd Cottage cheese and Ricotta cheese; in a small bowl and stir well.

  • In a pan spread spinach mixture in the bottom. Layer noodles, ricotta mixture, vegetables, spinach mixture and Mozzarella Cheese and add noodles at the end. Top with reserved spinach mixture, mozzarella cheese and parmesan cheese.

  • Bake in preheated oven for 30 minutes, till lightly browned on top.

  • Cool for 15 minutes before serving.
