Aloo Tikki
Tikki (potato cakes)) a tasty Indian treat to savor with chutney or pickle.
Ingredients:
3-4 large Potatoes
3 Green chillies, chopped
A few sprigs of chopped fresh coriander leaves,
Rock salt to taste
A pinch of Asafoetida
1/2 tablespoon of Red chilli powder
Ghee to fry
Preparation:
The potatoes need to be washed, boiled and then peeled off and mashed, when they are still warm. Then add green chillies, coriander leaves, rock salt, asafoetida and red chilli powder to the potato mash. Then divide the smashed part of potatoes to 10-12 parts. Give them a shape of cakes or tikkis. Take ghee in the pan and shallow fry the tikkis. Continue frying until both the sides of the tikki turns golden. Then take them off the oil, as they will be still carrying lots of oil so put them on a paper which will absorb the extra oil. Serve them hot with lemon or mango pickle or green chutney.
