- Recipes featuring several eggs go best for brownies that are like cakes. For less soft brownies you can choose recipes with small number of eggs and prepare fudge-like brownies with more chocolate and butter and less amount of flour. If you want to prepare the best brownies, do the mixing with hands.
- Use the appropriate size of pan mentioned in the recipe. A large pan will over-bake the brownies and make them dry and if it is very small, the batter will be thick and the brownies will remain under-baked. Choose a shiny pan which has a light color for even conduction of heat. Lubricate the pan with butter or any other greasing agent and after greasing also lubricate the lining. You can lift out the brownie after baking and cooling them and can also invert them on one platter. Fully greased muffin tins will also help you in making good brownies and help you in avoiding the trouble of cutting the brownies into shapes.
- When the brownies will be baked completely they will contract in size. For checking whether the brownies are ready or not put in a wood pick into their center. It will come out clean then they are ready.
- Creatively use candied fruits, nuts, chocolate curls, chocolate frosting and powdered sugar for topping the brownies.
