• 3/4 cup of confectioners sugar
• 2 and 1/2 cups of heavy cream
• 1 teaspoon of dark rum
• 1 teaspoon of vanilla
• 1/4 cup of toasted sliced almonds
• 1 cup of finely crushed coconut cookies
• 2 egg whites
• 12 maraschino or candied cherries

For preparing Tortoni, first, a 12 opening muffin tin has to be prepared with paper liners. Then whip the heavy cream till it turns to be slightly stiff. You have to put the rum, vanilla and sugar into the cream and continue whipping until the cream peaks. Then fold in some crushed cookies.



Take another bowl and put the egg whites. Continue beating it till a stiff peak is formed. Then slowly pour in the stiff egg whites into the mixture of cream and mix it properly.

Now, take a clean cream scoop and scoop this mixture into the prepared lining of muffin. Put it for refrigeration. Take it out after about 2 to 3 hours or keep it till it is firm.

Make sure to garnish Tortoni with almonds before serving and to add the final touch, add 1 cheery in every portion.
